Ingredients
1 heaped cup cottage cheese
2 eggs
1 tablespoon Italian seasoning
½ cup flour
1 teaspoon baking powder
1 cup shredded cheddar or mozzarella cheese (divided)
3 tablespoons tomato paste (or to taste)
Optional toppings: olives, capsicum, ham, mushrooms, pepperoni or extra herbs.
Method
Preheat the oven to 205°C and line a baking tray with baking paper.
In a large bowl, combine the cottage cheese, eggs, Italian seasoning, flour, baking powder and half of the shredded cheese. Mix until well combined.
Using a tablespoon, scoop the mixture onto the prepared tray to form 9 buns.
Gently press each bun down slightly with the back of the spoon.
Top each bun with a small amount of tomato paste, the remaining shredded cheese, and any additional toppings you enjoy.
Bake for 25–28 minutes, or until the buns are golden and set.
Allow to cool slightly before serving.
Storage
Store the pizza buns in an airtight container in the fridge for 3–5 days.
They can be eaten cold or reheated in the oven or air fryer to restore their texture.
